INGREDIENTS
2 lbs large shrimp
3 tablespoon minced onion, I used a sweet Vidalia but you could substitute a red or green onion
2 tablespoon minced garlic
zest and juice of 1 lemon
¼ cup olive oil
3 tablespoon balsamic vinegar
¼ teaspoon freshly ground black pepper*
1 cup quinoa
2 cups water or chicken stock
2 to 3 cups roasted or grilled vegetables (I used brussel sprouts, carrots and cauliflower)
