Years ago (so the legend goes) this recipe was created by the Chef of the Palace Hotel in honor of a close friend, who had just opened a restaurant of the same name.

Ingredients

1 Clove garlic (peeled and halved)
1/3 C Minced parsley
1/3 C Minced chives
1 Tbs Minced scallions
1/4 C Minced fresh tarragon
8 Anchovy fillets (rinsed, drained, and minced)
3 C Mayonnaise
1/3 C Tarragon vinegar

Rub a small bowl well with cut sides of garlic; discard garlic. Add remaining ingredients and mix well; cover and chill 1 to 2 hours. Use to dress crisp green salads Dressing keeps well in refrigerator (about 1 week.
