1/4 cup finely chopped parsley

1 stick of butter
•
1 cup chopped onions
•
1/3 cup celery 1 cup light cream
•
2 cups medium-sharp cheddar cheese
•
1/2 cup Swiss cheese
•
3/4 cup Velveeta chesse
•
salt and pepper to taste
