2 tbsp grapeseed oil or coconut oil
100 g onions (diced)
4 garlic cloves (minced)
1 cm cube ginger (grated)
2 tsp ground cumin
2 tsp ground coriander
1 tsp ground turmeric
1 tsp salt
½ tsp garam masala
½ tsp ground cardamom
100 g carrot (finely diced)
100 g courgette (zucchini) (finely diced)
750 ml vegetable stock
250 ml passata
160 g dried mung beans
100 g frozen spinach cubes
100 g coconut cream
3 tsp tamarind puree
nigella seeds and coriander (cilantro) leaves to garnish
