INGREDIENTS

2 cups arborio rice
•
6 cups of chicken or beef broth / stock, divided
•
1 teaspoon celtic sea salt
•
1/2 cup minced onion or 1/4 cup shallot (or 1 Tablespoon powdered onion)
•
2 cloves minced garlic (or 1 teaspoon garlic powder)
•
1/2 cup white wine (I used riesling but I think a pinot or chardonnay would have been great)
•
1 cup grated parmesan or other hard white cheese (for dairy free replace with 1/2 cup of good quality cutltured ghee)
•
3 Tablespoons butter (omit for dairy free)
•
1 cup fresh or frozen peas
•
1/2 cup diced spring/green onions / scallions
•
Any kind of protein that you want to add, such as turkey, ham, chicken or shrimp, or none is fine too
