Horchata is a non alcoholic drink that is made with rice... I first had this in a mexican restaurant years ago and absolutely loved it!! I found this recipe for it not too long ago and on a hot summer day it's really very refreshing!
In a large bowl combine rice and water and let soak overnight.
Pour into a blender and puree till smooth, then strain through a fine mesh sieve. Return the strained liquid to the blender and puree again. Strain through a wet discloth or fine cheese cloth into a pitcher.
Rinse out the blender to remove any residue, then pour the liquid back into the blender with the vanilla and sugar. Blend on high till sugar is fully disolved.
