OATMEAL & COCOA BREAKFAST FOR A COLD MORNING

On those frigid winter mornings in Indiana, before school my mother would prepare a steaming bowl of oatmeal for me, laced with plenty of sugar. To accompany it, she would make a mug of hot, chocolaty cocoa with one or two of those huge marshmallows floating on top. It may not have been the most healthy breakfast with all that sugar, but it sure was good!

Ingredients

HOT OATMEAL:

1 3/4 c
water (or milk for a creamier oatmeal)
1 c
quaker quick oats
dash(es)
salt

COCOA:

1/3 c
cocoa powder
1/3 c
sugar
dash(es)
salt
1/2 c
water
3 1/2 c
milk
1/2 tsp
vanilla

Step-By-Step

1For the oatmeal: in a medium saucepan, bring the water (or milk) and salt to a boil. Stir in oats. Cook about 1 minute, stirring occasionally.
2Serve with brown sugar and/or fruit of your choice.
3For the cocoa: In a saucepan, mix cocoa, sugar and salt; add water. Bring to boiling, stirring constantly. Boil 1 minute. Stir in milk; heat to boiling point (do NOT boil). Add vanilla; beat with rotary beater just before serving. Float two large marshmallows on top of each serving. Makes about 4 servings.
