Portugese Traditional Rice Pudding

Haven't tried this yet, but it sounds yummy. Note the easier version listed.
absorbed. Warm the milk and add sugar to milk.
Bring to an almost boil. Add rice to milk mixture.
until milk is almost absorbed. Add 2 TB unsalted butter. Add dry package of lemon instant pudding.
Sprinkle top with cinnamon.
For the Traditional Rice w/o the instant pudding.
Dip lemon peel in milk. Add 8 egg yolks.
