PEACH BREAD PUDDING WITH SOUTHERN COMFORT SAUCE

I was looking to make a twist on a traditional bread pudding and I came up with this. Made it for my husband and he almost ate the whole thing!! I'm sure his cardiologist wouldn't appreciate it, but it sure tastes good:)

Ingredients

2 pkg
12 oz each, hawaiian king rolls, cubed
2 c
heavy cream
1 c
sugar
2 Tbsp
sugar
4 Tbsp
butter, melted
4 large
eggs
1 tsp
vanilla
2 can(s)
15 oz each, sliced peaches, cubed
1 c
pecans, chopped

SOUTHERN COMFORT SAUCE

1 stick
butter
1 c
heavy cream
1 c
sugar
2 large
egg yolks
1/3 c
southern comfort

Step-By-Step

1Preheat oven to 350 degrees and lightly butter a 9x13" baking dish.
2Add bread cubes to a large bowl.
3In a medium bowl, whisk 1.5 cups cream, 2 cups milk, 1 cup sugar 4 tbsp melted butter, 4 eggs and vanilla.
4Add cream mixture and diced peaches to bread cubes and toss to combine.
5Pour mixture into the greased dish. Let sit for 15 minutes.
6Drizzle the bread mixture with the remaining 1/2 cup cream.
7Sprinkle pecans on top then the remaining 2 Tbsp of sugar.
8Bake until the center is set - about 45 minutes. Serve warm or cold with Southern Comfort Sauce &/0r whipped cream.
9To make the sauce, first melt the butter in a heavy saucepan.
10In a small bowl, mix cream, sugar and yolks - whisk together.
11Add creamed mixture to butter - cook over medium heat until it comes to a boil, stirring constantly -reduce heat and cook for 4 more minutes.
12Remove from heat and add Southern Comfort (it would also be good with Amaretto or Rum) - serve sauce warm or cold over bread pudding, stirring well before serving.
