Ingredients For lemon pudding ?????

  • 3 c
    cauliflower, chopped
  • 1 c
    milk (i use lactaid)
  • 3 Tbsp
    sugar
  • 1 Tbsp
    pure vanilla extract
  • 1 Tbsp
    lemon zest, grated
  • 1/4 c
    lemon juice

How To Make lemon pudding ?????

    Add cauliflower, milk, sugar, extract & zest to a medium sized saucepan. Bring to a boil on medium-high heat, uncovered. Once boiling, reduce heat to a simmer & cook; uncovered, 5 - 7 minutes, until cauliflower is very soft. Remove from heat.

    Add in lemon juice & pour into the bowl of your food processor or blender. Blend on high for 1 minute, or until very smooth. Pour into a clean bowl & allow to cool at room temperature. Cover & refrigerate overnight, for at least 20 hours. Refrigeration helps the bold lemon flavor subside & really transforms this pudding. DO NOT SKIP THIS STEP!

    Substitution notes: Feel free to use any type of non-dairy milk you have on hand. Some people like using unsweetened almond milk for dessert recipes because it's naturally sweeter (& lower in fat & carbs) than other non-dairy milks. Any type of sugar would work here.
