Been seeing folks mention lemon curd in comments about recipes and thought since I looked it up, I'd share the recipe I found

Ingredients

whole eggs
2
egg yolks
1 1/2 c
sugar
2 Tbsp
grated lemon rind
2/3 c
lemon juice
2 stick
butter or margarine

Directions Step-By-Step

Beat eggs, yolks,and sugar in top of a double boiler with electric mixer until light and fluffy.
3 to 5 minutes

Beat in rind, juice and butter.

Cook stirring constantly , over hot, not boiling water until mixture thickens, about 15 minutes.

Remove from heat, cool.

Spoon into jars, seal; refrigerate for up to 2 weeks
