Ingredients

1 c rice
3/4 c sugar
1 can(s) evaporated milk
1 can(s) water
1/2 c raisins *optional*
1 tsp vanilla

When I was a new bride, a neighbor lady taught me a few things in the kitchen. One thing she taught me was washing and soaking long grain rice, and this easy recipe. I think I baked it for my husband once a week LOL. It is delicious hot , warm or cold.

 

Directions

rince rice, until water is almost clear. I soak it and keep changing the water to remove most of the starch.

In a 3 quart baking dish, add all ingredients, stirring to incorporate.

bake, uncovered in a 325 degree oven 45 minutes to 1 hour.

You can stir halfway thru baking time if you wish. Check rice for doneness.

My Dad loves rice pudding! I have had no luck in rinsing rice. Every time I do to make regular rice, it gets sticky. I have no clue why! BUT I will be making this for Dad this weekend for sure! :)

I stir the rice around with my fingers. pour most water off and just stir with finger tips. the cloudiness you see is the sticky starch.

this is so easy, mix it up and forget it . OOH I forgot to say add 1 teaspoon of vanilla !!!

I add almond ext. to alot of stuff. I take ricotta cheese, about 1/2 cup, add a teaspoon almond extract and a pkt of equal for a quick protein pick me up. and feels like a fancy dessert !
