2IN A MED.BOWL MIX SUGAR, BAKING POWDER,AND SALT. NOW ADD POTATOES AND BUTTER (MIX WELL).GRADUALLY ADD WHIPPING CREAM AND MILK ,STIRRING UNTIL WELL BLENDED,NOW STIR IN LEMON RIND, LEMON JUICE, VANILLA ,AND NUTMEG.ADD BEATEN EGGS AND MIX WELL.
3POUR MIXTURE INTO PIE SHELLS AND BAKE IN PREHEATED OVEN FOR 55 MIN. OR UNTIL KNIFE INSERTED IN THE CENTER COMES OUT CLEAN.

Never had it but I bet it is good, mainly because Fannie baked it!! LOL! Is it the same as using squash to make a mock pumpkin pie; does this taste sort of like a custard?

I take it that the potatoes must be mashed potatoes, yes? You could use left over mashed potatoes.
