Topless Blueberry Pie

Nothing like eating this pie when made from freshly picked home grown blueberries!

Ingredients

3 c
blueberries, fresh or frozen
2 Tbsp
cornstarch
1/2 c
sugar
3 Tbsp
lemon juice
1
fresh or frozen pie crust
1/4 c
chopped walnuts (optional)

Step-By-Step

1Bake frozen pie crust in oven for time listed on package and then let cool.
2Mix 2 cups of blueberries with cornstarch, sugar, and lemon juice. Cook blueberry mixture in microwave for 3 minutes. Stir and then microwave for another 3 minutes until thickened.
3Add 1 additional cup of blueberries to microwave blueberry mixture. Pour combined mixture into pre baked pie shell. My add chopped walnuts to top of pie.
4Put pie in refrigerator to cool for an hour and then serve.
