Strawberry-Rhubarb Pie

Ingredients

1 1/2 c
sugar
3 Tbsp
quick cooking tapioca
1/4 tsp
salt
1/4 tsp
nutmeg
3 c
rhubarb, chopped
1 c
sliced strawberries
2-3 Tbsp
unsalted butter
1
egg white beaten
2
unbaked pie shells

Step-By-Step

1Heat oven to 400 degrees
2Combine sugar, tapioca, salt and nutmeg. Add rhubarb and strawberries. Mix to coat fruit, let stand 20 minutes.
3Line pie plate with pastry. Fill with mixture and dot with butter.
4Top with second pie shell. (or make a lattice top) Cut slits in pie shell and seal. Brush with beaten egg white, and sprinkle with sugar.
5Bake 35-40 minutes
