quick cooking tapioca
Heat oven to 400 degrees
Combine sugar, tapioca, salt and nutmeg. Add rhubarb and strawberries. Mix to coat fruit, let stand 20 minutes.
Line pie plate with pastry. Fill with mixture and dot with butter.
Top with second pie shell. (or make a lattice top) Cut slits in pie shell and seal. Brush with beaten egg white, and sprinkle with sugar.
