Ritz Cracker Pie

I lived in Louisiana for 20 years and i came upon this recipe while i was living there. It is the best pie, i could eat a whole one. Everyone in my family loves this pie, when you make it you will see why.

3 egg whtes
1 cup sugar
1 cup chopped pecans
1 cup rolled ritz crackers
1 teaspoon vanilla

Directions Step-By-Step

In a glass bowl, beat 3 egg whites untill stiff. Gradually add 1 cup sugar,[alittle at a time]. With a spoon, fold in 1 cup pecans, 1 cup rolled ritz crackers,[i put mine in a ziploc bag and roll with a rolling pin], and 1 teaspoon vanilla. Place in slightly greased pie plate with sides higher than the center. Bake 325 degrees for 30 minutes
Whip 1/2 pint whipping cream and 2 tablespoons sugar untill it gets thick. Spread on cooled crust and top with 1/2 cup chopped pecans
