Blend milk, lemon juice, rind, extract, and egg yolks.
Add cream of tatar to whites. Beat egg whites stiff enough to hold a peak. Add sugar gradually.
Fold egg white mixture into lemon mixture. Pour into shell and bake in slow oven (325 degree oven) for 25 minutes or until light golden brown.
