I have made this pie for years as soon as the first Rhubarb is ready. We all love this pie

Ingredients

1
pastry for 9" two-crust pie
3
eggs
2 c
sugar
3 Tbsp
milk
1/4 c
flour
1/2 tsp
nutmeg
4 c
diced rhubard
1 Tbsp
butter

Step-By-Step

1Heat oven to 400

2Prepare pastry.

3Beat eggs slightly;add remaining ingredients except for butter and mix thoroughly. Pour into pastry lined pie dish.Dot with butter

4top with a lattice top

5cover edges with foil to prevent excessive browning; remove foil last 15 minutes of baking

6Bake 50 to 60 minutes or until nicely browned. I bake 50 minutes

7Serve slightly warm
