My dad's birthday was a few days ago, and I was thinking about him. His favorite pie was pineapple pie, which my mom made for him. I decided to make it a little differently and came up with this pie. Everyone liked it, but my husband said he preferred the original of my mother's.

Stove Top

Ingredients

1
prebaked pie crust
20 oz
can crushed pineapple with juice
3/4 c
sugar, divided
2 tsp
cornstarch
8 oz
cream cheese, softened
1 c
heavy cream
1 tsp
vanilla extract

Step-By-Step

1Place the pineapple, and juice, in a heavy saucepan and on medium heat, bring to almost boiling. Mix 1/2 cup of sugar, (more if you want it sweeter), and the cornstarch. Once it is mixed well, add to the pineapple and stir well. Allow the pineapple to come to a boil and stir as it thickens. Cook for 1-2 minutes. Remove from the heat and allow to cool completely.
2Beat the cream cheese until smooth. Add the cream and vanilla, and beat until medium to stiff peaks form. Fold in the cooled pineapple.
3Fill the piecrust and refrigerate until ready to serve. You could serve this with more whipped cream on top.
