Pecan Pie for diabetics

This recipe came from All Recipes site and I have not had time to make it as yet but I saw on the comments that this pie was great so we shall see if it is so won't we when you try it and let me know! ha ha I plan on making this pie as soon as I do my big grocery shop next week. and I will post a picture then.

Ingredients

1 c
brown sugar
1/4 c
baking splenda (splenda and white sugar)
1/2 c
butter

milk

vanilla
1 c
chopped pecans

Directions Step-By-Step

Preheat oven 350.

beat eggs until foamy and stir in melted butter

Stir in brown sugar,baking splenda and flour.
mix well

Add milk,vanilla and nuts and mix well.

Pour into a 9 inch pie shell. Bake for 10 minutes at 400 degrees then reduce to 350 and bake for 30-40 minutes or until done.

    Hi Shirley, did you ever get a chance to make this? Just wondering. Many diabetis in the family and they would appreciate something with less sugar than the original.

    No I have never made it as I just recently found out I am diabetic and I have to wait till I can get the ingredients.. I do my big grocery shopping when I get my SS check so it has to wait till I can get the ingredients. I will make it and let you know and will also post a picture of it as well..

    One thing I know for sure is that I have got to get with the program and stay with it till the end.I think the worse thing with the diabetes for Me is that if I don't get with it and stick to the change of eating habits I could end up blind and for a gal that loves to read that would just be the end for me. What diabetic recipes I have seen they look good to me and I suppose you could take any recipe and make it diabetic friendly. I have it in my head that my plate should be half veggies. meat the size of a card and small size rice or potato and sugar free desserts such as a pie should be 1/8th of a piece. So that means smaller portions of everything too.. My spoiled old tummy is going "OH NO"! LOL
