PECAN MERIGUE PIE

The ingredients are a little bizarre, but the pie is tasty.

I've only used the Ritz crackers, but other "buttery" crackers may work just as well.

Ingredients

3
egg whites
1 c
granulated sugar
1 tsp
vanilla extract
14-16
ritz crackers, crushed
1/2 c
pecans, chopped

Step-By-Step

1Preheat oven to 350 degees.

Spray 9" pie plate with non-stick cooking spray and set aside.
2Crush Ritz crackers and mix with chopped nuts. Set aside.
3In mixer with whisk attachment, beat 3 egg whites until frothy. Slowly add granulated sugar and vanilla extract. Continue beating until stiff peaks form.
4Fold cracker-nut mixture into egg whites and pour into pie pan. Bake for 30 minutes.
