This is hubby's favorie pie and when peaches come in season I make 2 a week just to keep up with demand LOL

Ingredients

FILLING

peaches, fresh skined and sliced
1/3 c
flour
1/2 c
sugar ( you can up to 1 cup of sugar depends on your taste for sweetness)
1/4 c
butter, cold cubed
1/2 tsp
cinnamon, ground
1/4 tsp
nutmeg,fresh ground

CRUST

3 c
pastry flour, whole wheat
1 1/2 tsp
salt
3 Tbsp
sugar
1 c
shortening, cold and cubed
1
egg
1 tsp
vinegar, white distilled
5 Tbsp
cold water

Step-By-Step

1In large bowl combine flour, salt and sugar. Mix well, then cut in shortening until crumbly
2In small bowl combine egg, vinegar and 4 tablespoons of water whisk together and to flour mixture using a fork until dough forms a ball add 1 more tablespoon of water if needed
3let dough rest atleast 10 minutes in the refigerator before rolling out
4this makes 2 crusts
5For filling
Place sliced peaches in a large bowl pour in sugar, flour and spices and mix well place mixture into a deep pastry lined pie plate and dot with cold butter and place top crust on top of the peaches and crimp cut 4 slits in the crust . Brush with egg wash and dust with cinnomon and sugar. Bake at 350 for 45 to 60 minutes until crust is golden brown.
