This recipe is from Better Homes and Gardens - Summertime Cooking from 1990. No baking, so keeping the house cool. And, chilled in the fridge, which keeps you even cooler, when you eat it. Refreshing fruit and cream cheese. Chill time not included in prep time--takes 1 to 24 hours. So best to prepare the day or night before.

Ingredients For no-bake fruit pie

  • CREAM FILLING
  • 1 pkg
    8 oz. cream cheese, softened
  • 1/4 c
    sugar
  • 2 tsp
    shredded orange peel
  • 2 Tbsp
    orange juice or orange liqueur
  • CRUST AND FRUIT
  • 1
    butter-flavored or graham-cracker-crumb pie shell
  • 4 c
    sliced fresh peaches
  • 1 Tbsp
    lemon juice
  • 1 c
    fresh blueberries
  • TOPPING
  • sifted powdered sugar (optional)

How To Make no-bake fruit pie

    Chill time not included in prep time. Make day or night before.

    Rinse fruit. Peel peaches and slice. Toss peaches with lemon juice to prevent browning.

    In a mixing bowl, combine cream cheese, sugar, orange peel and orange juice or orange liqueur orange, until smooth. Carefully spread cream cheese mixture into pie shell.

    Arrange peaches and blueberries over the cream cheese mixture.

    Chill for 1 to 24 hours. If desired, sprinkle with powdered sugar. Makes 6 to 8 servings.
