This was a recipe that was my mom's that she either got from a friend or out of a cookbook. This custard-like pie forms its own crust and the coconut will rise to the top. It is so easy, all the ingredients go into a blender. Instead of just making pudding for the kids when I had excess milk on hand and wanted to use it up before it expired, I would sometimes make this.
butter or margarine
1 1/2 tsp
1Put all ingredients into a blender. Blend well at low speed.
2Pour into a 10" buttered pie pan.
3Bake at 350 degrees for 60 minutes.
4A crust will form on the bottom, a filling in the middle and the coconut will rise to the top.
