Lattice Pineapple Pie

One of my favorite pies. My Mom used to make this for me.

Ingredients

1 20oz can(s)
dole crushed pineapple (undrained0
1/2 c
sugar
2 Tbsp
cornstarch
1 Tbsp
butter or margarine
1 Tbsp
lemon juice
1 pkg
pie crust for 9 in. pie

Step-By-Step

1Mix together pineapple, sugar, cornstarch & salt in pan. Cook & stir until thickened and turns clear. Stir in butter & lemon juice. Cool about 10 min.
2Pour into unbaked 9" shell. Cut remaining crust into 1 " strips for lattice top. Weave strips crisscross over pie. Pinch edges. Egg wash the crust. Sprinkle top with a little sugar & cinnamon.
3Bake at 400 degrees for 25-30 min. until light golden brown.
