Judy's Macadamia Nut Pie

Credit for this recipe goes to my sister-in-law, Judy. She brought this recipe home from Hawaii. It fast became a family favorite! Unfortunately, in my house, it disappears too fast for me to get a photo :)

Ingredients

3 large
egg whites
1/2 tsp
baking powder
1 c
sugar
1 tsp
vanilla extract
1 c
graham cracker crumbs
3/4 c
coconut, shredded (divided)
3/4 c
macadamia nuts, chopped (divided)
1 small
cool whip

Step-By-Step

1Preheat oven to 350 and lightly grease a 9" pie pan
2Beat egg whites and baking powder until stiff peaks form
3Add sugar and vanilla gradually, beating until of meringue consistency
4Fold in graham crumbs, 1/2 cup coconut and 1/2 cup nuts
5spread batter into pie pan and bake for 30 minutes
6Allow to cool completely
7Spread Cool Whip over top and sprinkle with remaining coconut and nuts.
