Roberta's Impossible Pie

This recipe was actually given to me by my sister many many years ago. The only name she gave it was 'impossible pie' I like to think of it as 'Roberta's Impossible Pie' I believe she would have liked that!
I hope others will enjoy this as much as my family does!

Ingredients

4 large
eggs
1/4 c
margarine
1/2 c
all purpose flour
2 c
rich milk (whole milk or table cream)
1 c
coconut, flaked
1 c
white sugar
2 tsp
pure vanilla extract

Directions Step-By-Step

Blend all ingredients in blender for a few minutes until well blended together.
Pour into a deep 10 inch greased pie plate.

Bake at 350 degrees for about 1 hour or until centre tests firm.

Please Note, the flour will settle to form the crust, the coconut forms the topping, and the centre is an egg custard filling.
