Ingredients
- 6 sheets honey graham crackers, low fat, finely crushed (1/2 c)
- 2 tablespoons butter, melted
- 1 teaspoon sugar
- 1 box sugar free lime jell-o (4 serving size)
- 3/4 cup boiling water
- 1 - 16 oz. packages cottage cheese, fat free
- 1 - 8 oz. packages cream cheese, fat free, room temperature
- 1 - 8 oz. packages cool whip, fat free, frozen, thawed
- key limes, sliced, for garnish, optional
How To Make healthified key lime pie bars

Step 1In a small bowl, combine crushed graham crackers, butter & sugar. Press crumb mixture in the bottom of a 2 qt square baking dish. Refrigerate while making filling.

Step 2In a large bowl, combine gelatin & boiling water. Stir until gelatin is dissolved. Set aside.

Step 3In a blender or food processor, combine cottage cheese & cream cheese. Cover & blend until smooth, stopping several times to scrape the sides. Whisk 1/2 C of the cottage cheese mixture into the gelatin mixture. Whisk in remaining cottage cheese mixture until smooth. Fold in cool whip. Spoon filling over chilled crumb mixture.

Step 4cover & refrigerate for 8 - 24 hours or until filling is firm. To serve, cut into squares & top with a key lime wedge, if desired.
