My mother (my kids called her Ghee) was a "from scratch baker". To save time, I use a frozen pie crust. This was one of her favorite pies to prepare for all of us. Living in North Georgia, we are only an hour from the best apple orchards around. We used to go pick our own apples and by night fall, we would have a wonderful aroma calling us back to the kitchen for apple pie and ice cream. My mother passed away over 7 years ago but when I prepare this recipe, I am transported back to her kitchen with her love surrounding us.

With super scrumptious crunchy topping, this wonderful apple pie is a dessert standout. The gala apples are a terrific choice.

Ingredients

1
deep dish pie crust, baked (to save time, use frozen pie crust)
1/2 c
walnuts, chopped
1/2 c
plain flour
1/2 c
light brown sugar, packed
4 Tbsp
melted margarine
1
egg, white only
1/4 c
sugar
2 Tbsp
cornstarch
1 tsp
cinnamon
3 lb
gala apples
1 Tbsp
lemon juice

Directions Step-By-Step

Prick bottom and sides of crust with fork. Bake at 375 degrees 12 to 15 minutes or until lightly golden. Immediately brush bottom and sides of hot crust with light coating of egg white. Reset oven to 425 degrees.

While crust is baking - Mix pecans, flour, and brown sugar in bowl. Work in butter with fingertips until mixture resembles coarse crumbs. Set aside.

Meanwhile, in large bowl, combine sugar, cornstarch, and cinnamon. Toss in apples and lemon juice. Cover with waxed paper and microwave on High 12 minutes, stirring halfway through. Spoon filling into crust. Sprinkle pecan topping over filling.
Bake pie 10 to 12 minutes or until topping is golden. Cool on wire rack.

I really don't care for apples but this pie was the best I have ever had.

ok. i looked back further and saw this issue was already discussed.....sorry to repeat.
pie looks wonderful! it's done and a beautiful golden brown.
i just left out the nuts this time. and i also cooked the apple mixture on the stove instead of the microwave. i always mess things up trying micro cooking...... i have better success on the gas stovetop.

soooo....at the top in the ingredients list, you say WALNUTS, but in the rest of the recipe you say PECANS. not picking nits, but there are plenty of newbies who would be thrown for a loop by this. which is better? or is it up to your own personal preference? i think the walnuts would be better, myself.... btw.....the pie is going in the oven in about 3 secs.......

This looks wonderful Patti. I love the fact that you precook the apples a little bit before baking. I've found that most of the time, the apples are never tender enough for my liking, so this sounds perfect! Can't wait to try it. My family LOVES homemade apple pie!

Hello I made this apple pie today and followed her directions and it is AWESOME and so easy and I think we will really enjoy it for the wonderful topping, the only thing i didn't do,, I di not use the nuts. but that is o.k. How ever you like to do is fine..
