So Good!!! This recipe came from an Amish woman who sold baked goods at our local Farmer's Market. She was so generous to give out her great recipes.
She made the pie crust from scratch, of course. But you can buy refrigerated crust or frozen, if you prefer.
This pie is something like pecan pie. Its baked (not a pudding) and very rich and decadent.
Mix the corn syrup, eggs, sugar, butter, and vanilla together with an electric mixer (on medium speed) until light-colored and well blended. Stir in the pecans and coconut by hand.
Sprinkle the chocolate chips over the bottom of the prepared pie crust. Pour the corn syrup mixture over the chocolate chips.
Serve with Cool Whip or whipped topping if desired. Store in refrigerator if you have any left-overs.
