So Good!!! This recipe came from an Amish woman who sold baked goods at our local Farmer's Market. She was so generous to give out her great recipes.

She made the pie crust from scratch, of course. But you can buy refrigerated crust or frozen, if you prefer.

This pie is something like pecan pie. Its baked (not a pudding) and very rich and decadent.

Ingredients

1 c
light corn syrup
3 large
eggs
1 c
sugar
2 Tbsp
butter, melted
1 tsp
vanilla extract
2 c
chopped pecans
3/4 c
flaked coconut
3/4 c
semisweet chocolate chips
1
prepared pie crust (9 inch deep dish)
cool whip, if desired, for topping before serving

Directions Step-By-Step

1
Preheat oven to 350 degrees.

Mix the corn syrup, eggs, sugar, butter, and vanilla together with an electric mixer (on medium speed) until light-colored and well blended. Stir in the pecans and coconut by hand.

Sprinkle the chocolate chips over the bottom of the prepared pie crust. Pour the corn syrup mixture over the chocolate chips.
2
Bake in preheated oven until top is set, 55 to 60 minutes. Cool completely on a rack before serving. This takes about 2 hours.

Serve with Cool Whip or whipped topping if desired. Store in refrigerator if you have any left-overs.

Made this pie today and it looks wonderful, but when I cut it the filling was very runny. I cooked it for 60 minutes and the top got very brown. I let it cool well over two hours. Does anyone know why the filling may still be runny?

Hi Lynn, You can make this pie without the nuts (actually I often do as I am allergic to nuts myself). It is good but better with the pecans. If you like you can omit the nuts and use a full cup of chocolate chips.

I hate being allergic to tree nuts!!!

I know Tim says not alter the recipe but I was just wondering whether it would taste as good without the pecans since I am allergic?

Hi Wanda, the chips melt and mostly do rise and blend but there is still more chocolate on the bottom of the filling. So I guess the answer is both. :)
