Ingredients

COOKIE CRUST:

1/2 c
butterscotch chips
1 Tbsp
butter
1 1/4 c
vanilla wafer crumbs
1/2 c
butterscotch ice cream topping
1 qt
butter brickle ice cream, softened
2 Tbsp
rum liqueur, optional

Directions Step-By-Step

Crust:
Combine chips and butter in a medium saucepan over hot water; stir until chips are melted and mixture is smooth. Add wafer crumbs; stir until well blended. Press into a 9-inch pie pan. Chill until firm about 35-45 minutes.

Filling:
In a large bowl, combine ice cream and rum liqueur. Blend until smooth. Spoon the 1/2 cup butterscotch sauce over crust. Now spoon filling over sauce layer. Freeze several hours or until firm. Serve pie slices with whip cream and some warm butterscotch ice cream topping drizzled on top.
