- vanilla pudding mix (not instant)
- 2 tsp
- unflavored gelatin
- 2 c
- egg nog
- 1/2 tsp
- rum extract
- 1 c
- (small carton) whipping cream
- baked 9 inch pie crust
1Combine pudding, gelatin and eggnog in a saucepan. Cook on low heat OR in a double boiler, stirring until thickened and bubbly. Remove from heat and stir in rum extract. Cover surface of pudding with saran wrap to prevent skin from forming and chill. Whip cream until stiff. Beat eggnog mixture until smooth. Fold in whipped cream. Pour into baked pie crust and chill for several hours until set. Garnish with shaved chocolate, glazed fruit, whipped cream or nutmeg.
