This cool and creamy treat can be made into 1 large, deep-dish pie shell or 2 (9-inch) graham cracker crusts - one to keep and one to share! It can also be served as a fruit salad.

Ingredients

8 oz
cream cheese, room temperature
1/2 c
powdered sugar
2 Tbsp
fresh lemon juice
1/4 tsp
salt
12 oz
non-dairy whipped topping, thawed
1/2 c
finely chopped pecans
1/2 c
shredded coconut
8 oz
pineapple tidbits, drained
11 oz
mandarin oranges, drained
1/2 c
red or green grapes, halved
1/2 c
maraschino cherries, drained

deep-dish pie shell, baked
additional fruit , chopped pecans or toasted coconut for garnish if desired

Step-By-Step

1Using an electric mixer, blend the cream cheese, sugar, lemon juice and salt until smooth.
2Gently fold in whipped topping, pecans, coconut and fruit until combined.
3Spoon mixture into baked pie shell and garnish as desired. Chill for at least 2 hours or until serving time.
