Creamed Rhubarb Pie

This is my moms recipe. If you like rhubarb this is soooo good!! It is my favorite rhubarb pie recipe.

Ingredients

4 c
fresh or frozen rhubarb, cut into small pieces
1 c
sugar
2
eggs yolks
1 c
can evaporated milk
1/8 tsp
salt
2 Tbsp
flour (use 3 tbsp. if rhubarb is frozen)
1 tsp
cinnamon

Directions Step-By-Step

Put cut up rhubarb into unbaked pie crust.
( I use deep dish pie crust)

In large bowl beat 2 egg yolks.
( I use hand beater, pictured.)

Add flour, sugar, salt, milk, 1/2 tsp. cinnamon to beaten eggs, mix.
(use remaining 1/2 tsp. cinnamon for top of pie)

Pour mixture over rhubarb.
Sprinkle remaining 1/2 tsp. cinnamon on top of pie.

Bake 375 degrees for one hour or until custard is set.
