Cracked Egg Mini Pie

I found this recipe in a William Sonoma catalog . It calls for making a "bacon" crust. I used a pre made pie crust. I did make a few changes as well. The recipe is as follows and I hope you enjoy...

* My Mom does not like eggs so I mixed a teaspoon of mayonnaise with shredded cheese and diced ham. She said it was great. You will see this photo in one of the images.

****On a final note I candied bacon and baked it in the oven at 375 degrees for about 15 - 20 minutes or unil nice and crispy.

Ingredients

eggs
4
bottom mini pie crust rounds
1/4 c
shredded cheddar cheese or cheese of your choice
1/4 c
diced ham

Directions Step-By-Step

Preheat mini pie maker.

Using the crust of your choice cut out 4 bottom rounds. Set aside.

Break the eggs into 4 individual "cups". This will make it easier to add when you are ready to.

When the pie maker is heated and working quickly place the bottom crust into each pie well.

Divide the ham and cheese into the 4 bottom crusts. At this point carefully pressed down the ham and cheese with the back of a spoon.

Top each crust with one egg, close the pie maker and cook for 8 - 10 minutes depending on your baker.

Sprinkle tops with cheese or diced chives and enjoy...
