Another fabulous idea from Pat, Sauerkraut Pie. When I heard about this, I ran with it and made this recipe.

Ingredients

FILLING

1 can(s)
sauerkraut, rinsed thoroughly
1 c
shredded coconut
1 c
half and half
3
eggs
1 1/2 c
dark brown sugar
2 Tbsp
vanillla
1 tsp
almond extract
1 1/2 Tbsp
special dark cocoa powder
1 c
dark chocolate chips
2 Tbsp
cornstarch
1 tsp
cinnamon
1/2 tsp
allspice, ground

TOPPING

2 Tbsp
demerara sugar
holiday sprinkles, optional

CRUST

1
cinnamon coconut pie crust

Step-By-Step

1Mix all filling ingredients in a mixing bowl, mixing completely. Set aside.
2Prepare pie crust. If making heavily exposed pie crust, use a pie ring or cover entire pie with tin foil for half of the cooking time.

3Pour in filling. Sprinkle toppings.
4Place in oven at 350F for 30-40 minutes, or until the center is set.
5Refrigerate for 3 hours-overnight.
