This is my cherry pie filling recipe that works for pies tarts, pie pops, pocket pies, or even just on ice cream. :-) Don't bother with the can...make your own! The pie in my photograph has a crumb topping.

Ingredients For cheery cherry pie

  • 3 c
    sour cherries (i use frozen)
  • 2 c
    sweet cherries (frozen or fresh)
  • 3/4 c
    sugar
  • 1 pinch
    salt
  • 1/2 tsp
    almond extract
  • 1/2 tsp
    orange zest
  • 1 Tbsp
    freshly squeezed orange juice
  • nutmeg (just a tiny sprinkle or grating if using fresh)
  • 3 Tbsp
    clearjel modified cornstarch or regular cornstarch
  • 1 Tbsp
    water

How To Make cheery cherry pie

  • 1
    Place cherries in a saucepan, cover and cook on low until cherries start to release their juices. Uncover.

    Add all ingredients besides cornstarch/ClearJel and cook on medium until mixture comes to a boil. Combine cornstarch/ClearJel and 1T water in a cup and stir into cherry mixture.

    Bring mixture to a boil and cook for 1-2 minutes stirring constantly until thickened.

    Pour into pie shell of your choice and bake in a double crust pie or add a crumb topping before baking. You can also fill a graham cracker crust shell.
