Caramel Apple Pecan Pie

Ingredients

5 c granny smith apples (peeled, cored & sliced)
2 1/2 Tbsp minute tapioca
1 c light brown sugar (packed)
1 c dark corn syrup
3 eggs (slightly beaten)
1 c pecan pieces
1 tsp dark vanilla

My family loves Pecan pie and Apples with caramel. I decided to combine them and satisfy both cravings. It has been a great hit during the holidays, and looks very appetizing.

Mix and set aside sliced apples and tapioca.

Mix the remaining ingredients together and add to apple mixture. Pour into 9" deep pie crust dusted with flour on both sides to prevent from sticking to pie pan. Top with a lattice crust design.

Brush with milk on top pie crust and dust with cinnamon and sugar.

Bake 350* for 1 hour and 15 minutes.
Drizzle with your favorite caramel topping while still warm.
Let cool and serve. Yummm!

Enjoy!!! You can also drizzle more caramel lightly over each individual slice before serving. It looks really elegant when the drizzle goes onto the plate too.

To make your own caramel, take an unopened can of sweetened condensed milk and simmer it (just below a boil) submerged in water for about 3 hours. Let it cool before opening. It is delicious caramel.
