An old English side dish, filled with mashed potatoes & cabbage inside a puff pastry! Now don't that sound yummy?

Ingredients

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 1 1/2 pounds red potatoes, peeled, boiled & cooled
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 large egg yolk
  • 1 tablespoon water
  • 1 package puff pastry sheets, thawed
  • 1 1/2 cups cheddar cheese, shredded
  • 1 1/2 cups cabbage, chopped, steamed & cooled

How To Make bubble & squeak pie

  • Step 1
    Melt butter in large skillet over medium heat. Add onion; cook stirring, until softened, about 3 minutes. Coarsely mash potatoes; mix in onion, salt & pepper. Beat yolk with 1 Tbsp water; reserve.
  • Step 2
    Preheat oven to 400 degrees F. On lightly floured surface, roll out pastry sheet to 13" square. Fit into 9" springform pan so that edges of pastry hang over side of pan. Stir cheese into potatoes; gently press 1/2 in bottom of pan. Top with even layer of cabbage, then top with remaining potato mixture.
  • Step 3
    Roll out remaining pastry into 10" square; using bottom of pan as a guide, cut into 9" round. Place pastry round over potato mixture. Trim overhanging bottom pastry to within 3/4" of pastry round top. Brush top with some yolk mixture; fold excess pastry over top of pie to seal. Brush edge with yolk. Cut four slits into top. Bake 40 minutes or until golden.
