I WORKED WITH A SPANISH GIRL, AT A TITLE LOAN OFFICE, SHE SHARED THIS RECIPE WITH ME, OVER 5 YEARS AGO, NOW.. IT CAME FROM HER FAMILY'S RECIPES FROM MEXICO.. IT REMINDS ME OF CHEESECAKE IN A PIE SHELL.. WHAT I LIKE BEST ABOUT IT, IS EVEN WHILE IT IS STILL VERY WARM, YOU CAN SLICE IT TO SERVE, AND THE PIECES WILL NOT RUN...ENJOY....

Ingredients

graham cracker pie crust
1 large
8oz. package of cream cheese
2 large
eggs
1 Tbsp
lemon juice concentrate
1 can(s)
sweetened condensed milk
1 can(s)
evaporated milk
1 pkg
queso fresco cheese( in dairy with mexican food items)

Step-By-Step

1YOU WILL NEED A BLENDER FOR THIS RECIPE, A LARGE STANDARD SIZE ONE.. THE BATTER WILL COMPLETELY FILL IT TO THE TOP, WITH LID ON...
2PLACE CHEESES IN THE BOTTOM OF BLENDER, ADD EGGS, AND OTHER INGREDIENTS.
3MIX WELL, UNTIL VERY SMOOTH...THE BATTER WILL SEEM THIN, AND RUNNY...THAT'S NORMAL..
4POUR INTO THE 2 PIE SHELLS, BAKE AT 350* FOR APPOROXIMATELY 30-45 MINUTES, OR UNTIL KNIFE INSERTED IN THE CENTER, COMES OUT CLEAN..
5THIS PIE GETS A LIGHT BROWN TOP ON IT..WHICH ALSO IS NORMAL..COOL..AND SERVE, OR REFRIGERATE. I LIKE TO TOP MINE WITH CHERRY PIE FILLING TO SERVE IT..ENJOY..
6I HAVE A LOT OF RECIPE BOOKS, AND HAVE TRIED THOUSANDS, THIS IS THE EASIEST CHEESECAKE TYPE PIE..I'VE EVER FOUND...
