Zucchini Brownies

Yes, zucchini! And before you pass this recipe up I gotta tell you- even my son's friend who hates anything resembling a veggie loves these. Delicate, flavorful brownies with bits of butterscotch, mmmm!
I always double this recipe because everyone gobbles them up!

Ingredients

1/3 c
margarine
1 Tbsp
hot water
1 c
brown sugar, firmly packed
1
egg
1 tsp
vanilla
1 c
all purpose flour, unsifted
1 tsp
baking powder
1/8 tsp
baking soda
1/2 tsp
salt
3/4 c
zucchini, peeled and diced or shredded
1/2 c
walnuts, chopped (optional)
1/2 c
butterscotch chips

Directions Step-By-Step

In large pan, melt margarine and water together. Add brown sugar and beat well. Let cool.

Add egg and vanilla to mixture and beat.

Combine dry ingredients, then add to sugar mixture. Stir in zucchini and nuts.

Pour into greased, floured 9x9 pan. Sprinkle with butterscotch chips.

Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool in pan.
