- 1/2 c sugar
- 5 t flour
- 1 c strained orange juice
- 1 t lemon juice
- 1 egg yolk
- 3 t butter
- 2 t grated orange rind
- 2 1/2 slices canned pineapple-cut fine
Mix 1/4 c sugar with the flour in a double boiler.
Add the fruit juices & pineapple.
Cook over boiling water, while stirring, til smooth & thickened.
Pour mixture slowly over the beaten egg yolk, which has been blended with the remaining 1/4 c sugar, while stirring constantly.
Then return to double boiler, and cook 2 minutes longer.
Add the remainingingredients & cool.
Use as a filling between the layers of a cake or torte.
