Peel and core the apples. Then dice the apples and place the cubes into a medium saucepan. Cubes can be as big or as small as you want.
Depending on the tartness of the apple depends on how much sugar will be used. I like a lot of cinnamon in my applesauce. Stir to combine and add about a 1/4 cup of water. Taste to adjust sugar. The more cinnamon added the darker the color.
Cook over medium low heat until apples are very tender.
