| 1/2 c | potato starch |
| 1/2 c | cornstarch |
| 2 Tbsp | sugar |
| 1/4 tsp | baking soda |
| 1 tsp | baking powder |
| 1/2 tsp | xanthan gum |
| 1/2 tsp | vanilla |
| pinch of salt | |
| 1 | egg |
| 3/4 tsp | vinegar |
| 3/4 c | milk |

Directions
Preheat oil to 375 degrees. In bowl, combine all dry ingredients. Add egg & vinegar. Slowly add milk, mixing well to remove all lumps. You can either pour batter in a squeeze bottle or just slowly drop batter from spoon to form criss-crossing circles & ovals.Cook until ightly browned. Turn to brown other side as well. Remove & drain on paper towels. While still warm, sprinkle with powdered sugar on top.
