My mother always makes this during the holidays. With them coming upon us (seemingly quicker every year), I wanted to take the chance to share this recipe so others can enjoy it.
With a shortbread-style crust, cherry and walnut filling, and coconut topping it, not only makes an amazing dessert, but can be easily "dressed up" for an attractive presentation.

Ingredients

CRUST

2 c
flour
1/3 c
sugar
3/4 c
butter or margarine (softened)

FILLING

2
eggs, slightly beaten
1 c
brown sugar, firmly packed
1/3 c
flour
1 1/2 tsp
baking powder
1/2 tsp
salt
1/2 tsp
vanilla
1-10 oz jar(s)
maraschino cherries,drained,chopped; reserve juice & 6 cherries
1/2 c
walnuts, chopped (reserve some halves for decorating)

FROSTING

2 Tbsp
butter, softened
2 1/2 c
powdered sugar
3-4 Tbsp
reserved cherry juice
shredded coconut for decorating
walnut halves
reserved cherries, cut in half

Directions Step-By-Step

Crust:
Heat oven to 350 degrees.
Combine crust ingredients until crumbly.
Press into pan and bake 12-15 minutes until light brown.

Filling:
Combine filling ingredients and pour over baked crust. Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool. Frost.

Frosting:
Combine butter, powdered sugar, and cherry juice. Spread frosting on baked filling and sprinkle with coconut, then use walnut halves and cherry halves to decorate top.
