1 2/3 c
graham crackers, crushed
1 Tbsp
3 Tbsp
butter, melted

32 oz
cream cheese, softened
1 c
3 Tbsp
unbleached white flour
4 large
1 c
sour cream
1 Tbsp
instant coffee powder
1/4 tsp
1/4 c
boiling water

1Preheat oven to 325 F
2Combine graham cracker crumbs, sugar, and margarine and press onto bottom of a 9 inch springform cake pan. Bake for about 10 minutes, and remove from oven
3Increase oven temperature to 450 F
4Combine cream cheese, sugar, and flour mixing at medium speed with an electric mixer until well blended.
5Add eggs, one at a time, mixing well after each addition
6Blend in sour cream
7Dissolve coffee powder and cinnamon in boiling water; let cool
8Gradually add coffee mixture to cream cheese mixture, mixing until well blended
9Pour over crust and bake at 450 F for 10 minutes
10Reduce oven temperature to 250 F and continue baking for 1 hour
11Loosen cake from pan; let cool before removing rim of pan
12Whipped cream and whole coffee beans make a simple garnish for this cheesecake; with the Oreo cookie crumbs you can buy nowadays for the crust, combined with dark chocolate-covered coffee beans and a chocolate whipped cream for garnish, give it more of a mocha flavor....yummy!
