1Stir ricotta cheese with confectioners' sugar adding confectioners' sugar only by sitting in it.
2When all mixed, put filling in refrigerator to help make the filling thick.
3Get 1 large ziploc bag and fill with cream. Snip te corner of the bag to squeeze cream in the cannoli shell.
4Sift confectioners' sugar over cannolis.
5Note: If cream is too watery, add a little bit of flour at a time.
