If you like pecan pie, you will think you have died and gone to heaven when you try these!

My hubby doesn't care if I ever make pecan pie again. He prefers pecan bars now.

When my son-in-law comes to visit he always requests these.

Don't ruin them by using margarine! BUTTER!

Ingredients

2 c
all purpose flour
1/2 c
sugar
1/8 tsp
salt
1 1/2 stick
butter, room temperature

INGREDIENTS FOR FILLING:

1 c
brown sugar, firmly packed
1 c
light corn syrup
1 stick
butter, cold
4 large
eggs, lightly beaten
2 1/2 c
pecans, finely chopped
1 tsp
vanilla extract

Step-By-Step

1Combine flour, sugar, salt in large bowl; cut in the 1 1/2 sticks of butter thoroughly with fork or pastry blender until very fine crumbs. Press mixture into a greased 9 X 13 cake pan. Bake at 350 for 17-20 minutes.
2While crust is baking, combine brown sugar, corn syrup, 1 stick of butter in saucepan on top of stove. Bring to a boil over medium heat, stirring gently. Remove from heat. Stir 1/4 of the hot mixture into beaten eggs; add to remaining hot mixture slowly, continually stirring so as not to cook the eggs. Stir in chopped pecans and vanilla.
3When crust is done baking, pour the filling over the hot crust. Put back into oven at 350 for 34-35 minutes or until set. Cool completely before cutting. Makes 16 lge. or 24 small bars.
