This recipe is always a hit! I usually take it to work when we have a pot-luck luncheon for a dessert. I hope you enjoy it as much as my co-workers and friends do!

Ingredients

2 2/3 c
flour
1 1/3 c
sugar
1 1/3 c
unsalted butter
1/2 tsp
salt
1
egg, slightly beaten

THESE ABOVE INGREDIENTS ARE FOR THE CRUST

THE FOLLOWING INGREDIENTS ARE FOR THE FILLING

1 c
finely chopped almonds
1/2 c
sugar
1 tsp
grated lemon peel
1
egg slightly beaten

Step-By-Step

1PREHEAT OVEN TO 325. GREASE 9 X 10" SPRINGFORM PAN. IN A LARGE BOWL, BLEND ALL CRUST INGREDIENTS AT LOW SPEED UNTIL DOUGH FORMS. CHILL. DIVIDE IN HALF. SPREAD HALF INTO BOTTOM OF PAN.

2IN SMALL BOWL, BLEND ALL FILLING INGREDIENTS. SPREAD OVER CRUST TO WITHIN 1/2" OF PAN SIDES.

3BETWEEN WAXED PAPER, PRESS REMAINING DOUGH TO A 9-10" CIRCLE. REMOVE TOP LAYER OF WAXED PAPER PLACING DOUGH OVER FILLING. PRESS INTO PLACE, REMOVING OTHER PICE OF PAPER. BAKE AT 325 FOR 55-65 MINUTES, UNTIL LIGHTLY GOLDEN BROWN. COOL 15 MINUTES AND REMOVE FROM PAN.
