WHIPPED CREAM "CLOUDS":
1/2 pt heavy whipping cream
1/8 c sugar
1/2 tsp pure vanilla extract
BLUE JELL-O "SKY":
1 lg box berry blue jell-o
1 c boiling water
1/2 c water, ice cold
1/2 c ice cubes
ORANGE "SUNSHINE":
1 slice orange, peeled

Kimmi's Notes:

It’s really neat to see the depth of the cream in the jello, like puffy clouds!

Each jar might be a little bit too much for one serving, they might be cute in even smaller jars, but there’s plenty to share!

 

Directions

CLOUDS:

In stand mixer fitted with whisk attachment, add whipping cream; whip on low for one minute, then high until it starts to thicken, then add sugar & vanilla; beat it until it was very stiff. When ready, put it in the fridge while preparing the jello.

SKY:

In large bowl, add boiling water over blue jello, mix until dissolved. Add ice water & ice cubes & stir. After about 5 minutes, it will start to thicken. Put the bowl in the fridge for about 20 minutes. When it is firm enough to still be a little liquidy but tight enough to hold a little shape, it’s ready.

SUNSHINE:

Cut orange in slices, peel slices.

ASSEMBLY:

Using a parfait glass, fishbowl or mason jar, pour a layer of jello in bottom. Add a blop of whipped cream & push it against the glass. If it doesn’t go where you want, just wipe it off the glass & try some more. Blop, blop, blop, then add more jello. Then more clouds & don't forget to put that sunshine in there somewhere (against the glass too). Really, it’s almost TOO easy. Refrigerate at least 3 - 4 hours or until firm.
